I can't decide what to cook yesterday for our lunch. I have only green and red pepper in the refregerator and no other vegetables. But perfect for the recipe i have read from the del monte pineapple chunks labels. I have sliced of pork plus the peeper and pineapple chunks which can solve the idea of having a good lunch despite my laziness to go in the market to buy some vegetables.
Ingredients:
3/4 kilo of pork
1 egg
1/4 cup of all purpose flour
1 pc each red and green bell pepper
234 g of del monte pineapple chunks and reserve the syrup
Sauce:
1/4 cup ketchup (i used del monte because i like like almost fresh tomato, a little bit sour than other ketchup.
2 tbsp. cane vinegar
5 tbsp sugar
1/4 teaspoon salt
2 tablespoon cornstarch dissolved in one cup water, pineapple syrup
Boil pork in enough water until tender then set aside.
Beat the egg, add the flour and salt and mix well until smooth,
Dip the pork into the batter mixture and dip fry until golden brown. Set aside.
Combined the sauce ingredients in a pan, boil in low fire and stir continuesly until thick then add the chunks, bell pepper,simmer once more and then add on top the pork and remove from fire.
Serve hot.
